Our students are cooking up a festive treat at our on-site restaurant – and inviting the public to come in and taste their efforts. Catering and hospitality students will be serving their specially created Christmas lunchtime menu in the Orange Tree on December 5-7 and 12-14.
The menu includes starters such as winter minestrone soup, chicken liver and port pate, classic Waldorf salad and seared cured salmon and celeriac.
Main courses include roast turkey with prosciutto ballotine – served with chestnut stuffing, bread sauce fritter, sesame sprouts and spice parsnip puree, plus lemon sole with mussel and chervil broth, roast cider glazed free range pork, venison in red wine, or beetroot and feta tortellini.
And the dessert selection ranges from home-made Christmas pudding to whisky and chocolate mousse, vanilla panna cotta, or a selection of cheese and biscuits.
Stuart Leggett, catering lecturer at Telford College, said: “opening up the Orange Tree to staff and the public is vital to prepare the students for employment and to help hone their skills.”
The three-course meal costs ¬£14.95, which also includes tea or coffee.
