Cooking up at festive feast at The Orange Tree

Students at Telford College are cooking up a festive treat at their on-site restaurant – and inviting people to come in and taste their efforts.
Catering and hospitality students will be serving a special Christmas lunchtime menu in The Orange Tree, on the Haybridge Road campus, on November 24 and 28, and December 1, 5 and 8.

The menu includes starters such as smoked salmon cutlet with baby gem, fennel, orange and whisky dressing, or chicken liver and port parfait with picked raisins and sourdough crisp.

Main courses include the traditional turkey with all the trimmings, plus grilled sea bream with Asian style noodles, lime and coconut, braised shin of beef in local ale, or open lasagne of poached egg with purple broccoli.
And the dessert selection is Christmas pudding with brandy sauce, blackberry and vanilla cheesecake, vanilla panna cotta, or cheese and biscuits.
Stuart Leggett, chef lecturer at Telford College, said: “Opening up The Orange Tree to staff and the public is vital to prepare the students for employment, and to help hone their skills.”
The Orange Tree has two industry-standard training kitchens, and a restaurant which can seat up to 50 people.
