This course is for students who have an existing Level 2 qualification in hospitality and catering and want to take their skills to a higher level. The focus is on management and supervisory roles, running a successful business, exploring gastronomy, worldwide cuisine, food safety. Industry placement is a requirement throughout the course to gain insight into the industry and start to network to achieve employment on gaining their qualification. Students are trained by well qualified and highly ambitious staff. Enrichment opportunities from Industry specialists and trips to Exhibitions are offered but do come with an additional cost – although support is available through our grants and bursaries team.

– The principals of food safety supervision for catering
– Supervisory skills in the hospitality industry
– Exploring gastronomy
– Advanced skills and techniques in producing:
– vegetable and vegetarian dishes
– meat dishes
– poultry and game dishes
– fish and shellfish dishes
– Advanced professional cookery

Restaurant Severn in Ironbridge, The Shrewsbury Arms, Mercure Hotel at Albrighton
Progressing to: Supervisory roles in the hospitality and catering industry, executive head chef, business owner
HND in Business @Telford College
Aspirational careers: Michelin-starred chef, team member with Marco Pierre White or Gordon Ramsay restaurant chains
A full Level 2 hospitality and catering qualification. Plus, a grade 3-9 in English and/or maths
Students will have opportunties to attend additional enrichment including trips, visits and guest speakers. Students will be expected to work in the commercial kitchens and restaurant on service days.
All students will need to arrange and attend industry placement – related to hospitality and catering. .
